Ingredients

Filling

  • 8 ounce cream cheese, softened
  • 1/4 cup sugar
  • 1 egg
  • 1/2 teaspoon grated lemon peel
  • 1/4 teaspoon vanilla
  • 1/8 teaspoon salt
  • Cinnamon sugar (recipe follow)
  • 1/4 cup sliced almonds

Pastry

  • 1/3 cup sugar
  • 1/3 cup butter, softened
  • 1 Tablespoon shortening
  • 1/4 teaspoon vanilla
  • 1/8 teaspoon salt
  • 1 cup flour

Instructions

  1. Cream together sugar, butter, shortening, vanilla, and salt. Blend in flour and mix well. Pat into bottom and 1 1/2 inches up the sides of a lightly-greased 9" spring form pan.
  2. Pare, core, and slice apples to measure 4 cups. Turn apples into a shallow pan, cover with foil, and place in a 400° oven for 15 minutes.
  3. Meanwhile, beat cheese with sugar. Beat in egg, lemon peel, vanilla, and salt until mixture is smooth. Turn into pastry lined pan. Top with the warm, partly cooked apple slices. Sprinkle with cinnamon sugar and almonds. Set pan on baking sheet. Bake at 400° for 40 minutes or until crust is golden and apples cooked. Cool before cutting and serve cold.
  4. Cinnamon sugar: Stir together 1/3 cup sugar and 1/2 teaspoon cinnamon.
