Chef Gary’s Honey and Lime Baked Salmon

Ingredients

  • 2 limes (juice and zest)
  • 2 tablespoons honey
  • 2 tablespoons chopped cilantro
  • 2 tablespoons freshly grated ginger
  • 1/2 teaspoons red pepper flakes
  • 1/2 cup teriyaki sauce
  • 1/2 cup canola oil
  • 2 pounds salmon cut into servicing pieces

Instructions

  1. Preheat oven to 400 degrees
  2. Stir together all ingredients except salmon in a large glass or stainless steel bowl to make the marinade. Reserve 1/3 cup and set aside.
  3. Place salmon pieces in marinade and marinate 30 to 45 minutes in the refrigerator, turning several times.
  4. Remove salmon from marinade and discard marinade.
  5. Place salmon skin side down on a foil lined baking sheet or glass baking sheet.
  6. Bake on middle rack of oven for 20 minutes, basting occasionally with reserve marinade.
  7. Serve with baked mushrooms and fresh mango. Add a lightly chilled Pinot Gris and dinner is complete.
