Chef Gary’s Honey and Lime Baked Salmon

Ingredients
- 2 limes (juice and zest)
- 2 tablespoons honey
- 2 tablespoons chopped cilantro
- 2 tablespoons freshly grated ginger
- 1/2 teaspoons red pepper flakes
- 1/2 cup teriyaki sauce
- 1/2 cup canola oil
- 2 pounds salmon cut into servicing pieces
Instructions
- Preheat oven to 400 degrees
- Stir together all ingredients except salmon in a large glass or stainless steel bowl to make the marinade. Reserve 1/3 cup and set aside.
- Place salmon pieces in marinade and marinate 30 to 45 minutes in the refrigerator, turning several times.
- Remove salmon from marinade and discard marinade.
- Place salmon skin side down on a foil lined baking sheet or glass baking sheet.
- Bake on middle rack of oven for 20 minutes, basting occasionally with reserve marinade.
- Serve with baked mushrooms and fresh mango. Add a lightly chilled Pinot Gris and dinner is complete.
