Coronado Dip

An excellent nacho dip

Ingredients

  • 2 large boneless, skinned chicken breasts, cut into 1-inch pieces (1 pound)
  • 3/4 cup cold water
  • 1 1/2 ounces taco seasoning mix (1 envelope)
  • 8 ounces light Philadelphia Brand Neufchatel Cheese, softened (1 package)
  • 1 Tablespoon lime juice
  • 1 Tablespoon skim milk
  • 1/2 cup chopped tomato
  • 2 Tablespoons shredded KRAFT Light Naturals Reduced Fat Sharp Cheddar Cheese
  • 2 Tablespoons shredded KRAFT Light Naturals Reduced Fat Monterey Jack Cheese
  • 2 Tablespoons green onion slices
  • 2 Tablespoons chopped red pepper
  • 1 Tablespoon chopped pitted ripe olives

Instructions

  1. Bring chicken, water and taco seasoning mix to boil in large skillet; reduce heat. Cover; simmer 25 minutes.
  2. Cool slightly; shred chicken.
  3. Place Neufchatel cheese, lime juice, and milk in food processor or blender container and process until well blended.
  4. When ready to serve, spread Neufchatel cheese mixture onto center of large serving plate; surround with chicken. Top with remaining ingredients.
  5. Serve with tortilla chips.
