Fresh Apple Cinnamon Muffins

A simple but tasteful addition to any meat

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon, divided
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup buttermilk
  • 1 cup finely chopped apple (about 1 large, peeled and cored)
  • 4 Tablespoons (1/2 stick) butter, melted
  • 1/3 cup chopped nuts (any kind)
  • 1/4 cup firmly packed brown sugar

Instructions

  1. Preheat oven to 375°.
  2. In a large bowl, combine the flour, granulated sugar, baking powder, 1/2 teaspoon of the cinnamon, and salt.
  3. In another bowl, beat the egg with milk, then stir in the apple and melted butter; add all at once to flour mixture and stir until just moistened (batter will be very stiff).
  4. Spoon batter into a greased muffin tin(s), filling each cup about 2/3 full.
  5. In a small bowl, combine nuts, brown sugar, and remaining 1/2 teaspoon cinnamon; sprinkle mixture over muffin tops.
  6. Bake for 15 to 20 minutes or until wooden toothpick inserted in center of muffin comes out clean. Remove from pan immediately and serve warm.
