Fresh Apple Cinnamon Muffins

A simple but tasteful addition to any meat
Ingredients
- 1 1/2 cups all-purpose flour
- 1/3 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon, divided
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup buttermilk
- 1 cup finely chopped apple (about 1 large, peeled and cored)
- 4 Tablespoons (1/2 stick) butter, melted
- 1/3 cup chopped nuts (any kind)
- 1/4 cup firmly packed brown sugar
Instructions
- Preheat oven to 375°.
- In a large bowl, combine the flour, granulated sugar, baking powder, 1/2 teaspoon of the cinnamon, and salt.
- In another bowl, beat the egg with milk, then stir in the apple and melted butter; add all at once to flour mixture and stir until just moistened (batter will be very stiff).
- Spoon batter into a greased muffin tin(s), filling each cup about 2/3 full.
- In a small bowl, combine nuts, brown sugar, and remaining 1/2 teaspoon cinnamon; sprinkle mixture over muffin tops.
- Bake for 15 to 20 minutes or until wooden toothpick inserted in center of muffin comes out clean. Remove from pan immediately and serve warm.
