Frosted Cauliflower with Buttered Peas

Veggies for those who don't like them.

Ingredients

  • 1 medium head whole cauliflower
  • 10 ounces frozen peas (1 package)
  • 1/2 cup salad dressing
  • 1/4 teaspoon salt
  • 1 teaspoon prepared mustard
  • 2/3 cup grated sharp Cheddar cheese
  • Paprika, if desired

Instructions

  1. Remove leaves and wood base from cauliflower, leaving cauliflower whole. Wash under running cold water. Shake off some of the water. Leave some droplets remaining. Place cauliflower on 8-10" microwave safe plate. Cover with plastic wrap. Microwave 6-7 minutes per pound. (A guideline to remember is that 1 small head of cauliflower weighs 1 pound.) Leave covered while you cook peas and heat salad dressing mixture.
  2. Pierce package of peas with a fork on both sides for steam to escape. Place on paper plate and microwave on high for 4-6 minutes, shaking the package and turning it over halfway through. Rest while finishing the cauliflower.
  3. In 2 cup glass measurer, mix salad dressing, salt, and mustard. Microwave 30 seconds on high to blend flavors. Remove plastic wrap from cauliflower. Spread salad dressing mixture over cauliflower. Sprinkle with grated Cheddar cheese. Microwave 45-75 seconds on high to melt cheese. Sprinkle with paprika. Season peas with salt and butter or margarine. Surround the cauliflower with peas. Serve with pride and graciously accept the compliment.
