Tortellini Soup With Italian Sausage

A delicious soup that warmed and welcomed many family christmas travelers. Can be made ahead.

Ingredients

  • 1 pound Italian sausage
  • 1 cup onion, coarsely chopped
  • 2 garlic cloves, minced
  • 5 cups beef broth
  • 1/2 cup water
  • 1/2 cup dry red wine
  • 2 cups tomato, chopped
  • 1 cup carrots, thinly sliced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 8 ounce can tomato sauce
  • 1 1/2 cups zucchini, sliced
  • 8 ounces cheese filled tortellini
  • 3 Tablespoons fresh parsley, chopped
  • 1 medium green bell pepper, cut up
  • Grated parmesan cheese for garnish

Instructions

  1. Remove casing from sausage and brown in 5 quart pan.
  2. Remove sausage from pan, reserve 1 Tablespoon of drippings in pan.
  3. Saute onions in reserved drippings until they are tender.
  4. Add the garlic and saute for 30 seconds.
  5. Add beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce and sausage.
  6. Bring to a boil.
  7. Reduce heat and simmer uncovered for 30 minutes.
  8. Skim fat from soup.
  9. Stir in zucchini, tortellini and green pepper.
  10. Simmer covered an additional 15 to 40 or until your desired tenderness.
  11. Stir in the chopped parsley.
  12. Serve with grated parmesan cheese.

Notes

This soup freezes well. Thaw soup overnight and reheat.

Canned tomatoes work well as a substitute for fresh tomatoes
