Patriotic Muffins

A red, white, and blue muffin
Ingredients
- 2 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 6 Tablespoons butter
- 2 eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 3/4 cup fresh blueberries
- 3/4 cup hulled, coarsely chopped strawberries.
Instructions
- Preheat oven to 400°.
- Grease a 12 count muffin pan.
- In a large bowl, combine flour, sugar, baking powder, and salt. Mix until thoroughly blended.
- Cut in butter until mixture resembles fine bread crumbs.
- In a small bowl, beat eggs, milk, and vanilla. Stir into flour mixture until just moistened.
- Gently fold in berries.
- Spoon batter into prepared pans.
- Bake until golden brown, 23 to 25 minutes.
- Cool pan on a wire rack for 5 minutes, then remove muffins and cool on rack.
- Serve warm or at room temperature with whipped butter and blueberry and strawberry preserves.
