Red Velvet Cake

Red cake with a rich frosting
Ingredients
Cake
- 1/2 cup shortening
- 1 1/2 cups sugar
- 2 eggs
- 1 Tablespoon cocoa
- 1 teaspoon salt
- 1 teaspoon vanilla
- 2 ounces red food coloring (2 bottles)
- 1 cup buttermilk
- 2 1/2 cups flour
- 1 1/2 teaspoon soda
- 1 Tablespoon vinegar
Icing
- 5 Tablespoons flour
- 1 cup milk
- 1 cup sugar
- 1 cup butter
- 1 teaspoon vanilla
Instructions
- Cream sugar, short, eggs. Make a paste with coca and food coloring, and add to creamed mixture. Beat well, mix salt and vanilla with buttermilk. Add alternately with flour to creamed mixture and beat. Mix soda and vinegar and fold into the mixture. Do not beat. Grease and flour pans. Bake in two 9 " layer pans for 30 minutes at 350°.
- For icing, cook flour and mild until thick, stirring constantly. Let cool. Cream together sugar, butter, and vanilla. Add to flour mixture. Beat until consistency to spread. When finished, looks like whipped cheese.
- Spread frosting between cake layers and over cake.
