Roasted New Potatoes

Yummy potatoes

Ingredients

  • 24 small new potatoes (about 2 2/3 pounds)
  • Olive oil-flavored vegetable cooking spray
  • 1/4 cup Italian-seasoned bread crumbs
  • 1/4 cup freshly grated Parmesan cheese
  • 3/4 teaspoon paprika

Instructions

  1. Cook unpeeled potatoes in boiling water for 15 minutes. Drain and cool slightly. Quarter potatoes; coat cut sides with cooking spray. Combine bread crumbs and remaining ingredients; dredge cut sides of potatoes in bread crumb mixture. Arrange in a single layer on a baking sheet coated with cooking spray. Bake at 450° for 15 minutes.
