Roll Your Own Manicotti

Cheese filled Lasagna noodles

Ingredients

  • 1/2 pounds lasagna
  • 1 pounds ricotta or cottage cheese
  • 1/4 pounds mozzarella or American cheese, shredded
  • 1/4 cup flavored bread crumb mix
  • 1/4 teaspoon salt
  • 1/4 cup chopped parsley
  • 1 egg slightly beaten
  • 1 pint meat sauce
  • 1/4 cup Parmesan cheese

Instructions

  1. Mix ricotta, mozzarella, bread crumbs, salt, parsley, and egg. Boil lasagna in 2 quarts salted water to which 1/2 Tablespoon of oil has been added. (oil prevents macaroni from sticking together.) Cook for 15 minutes and drain. Cut lasagna strips in half. Spoon portion of cheese mix on lasagna strip and roll macaroni. Pour 1/2 meat sauce in pan and arrange manicotti in single layer over sauce. Top with remaining sauce, sprinkle with Parmesan cheese, and bake in moderate oven for 15 minutes

Notes

Can be frozen before or after cooking
