Zucchini Bread

Ingredients

  • 2 cups sugar
  • 1 cup salad oil
  • 3 eggs
  • 3 cups flour
  • 1/4 Tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cup chopped fresh zucchini
  • 1 cup nuts
  • 2 teaspoons vanilla
  • 8 ounces crushed pineapple, drained, optional (1 can)
  • 1 additional teaspoon cinnamon, optional

Instructions

  1. Mix ingredients together and pour into 2 3" x 7" pans. Bake at 350° for 60 minutes. Let cool for 20 minutes before taking out of pan.
