Zucchini Bread

Ingredients
- 2 cups sugar
- 1 cup salad oil
- 3 eggs
- 3 cups flour
- 1/4 Tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 cup chopped fresh zucchini
- 1 cup nuts
- 2 teaspoons vanilla
- 8 ounces crushed pineapple, drained, optional (1 can)
- 1 additional teaspoon cinnamon, optional
Instructions
- Mix ingredients together and pour into 2 3" x 7" pans. Bake at 350° for 60 minutes. Let cool for 20 minutes before taking out of pan.
